The Role

We are seeking a Sushi Chef Assistant to join our team. The ideal candidate will have a solid foundation in Japanese culinary techniques, particularly sushi preparation, knife skills, and ingredient sourcing. This individual will contribute to crafting an exceptional dining experience by assisting in the preparation and presentation of a limited menu, showcasing traditional Japanese cuisine with a modern twist.

  • Menu Execution: Assist in preparing and executing a variety of sushi offerings, including nigiri, sashimi, and maki rolls, with an emphasis on quality and consistency.
  • Ingredient Sourcing: Help source the finest local and seasonal ingredients in collaboration with senior culinary staff to ensure the highest quality.
  • Sushi Preparation: Demonstrate proficiency in traditional Japanese sushi techniques, maintaining high standards for taste and presentation.
  • Visual Presentation: Exhibit attention to detail to ensure each dish is visually appealing and reflects the precision of Japanese cuisine.
  • Sanitation and Efficiency: Maintain a clean, organized, and efficient workspace, adhering to food safety standards.
  • Collaboration: Work closely with the culinary team to support consistency and quality across all dishes, contributing ideas and techniques to enhance the sushi program.

  • Training Support: Assist in training other cooks in traditional Japanese preparation techniques, including rice preparation and knife skills.

 

The Ideal Candidate 

  • A passion for sushi-making and a commitment to delivering visually stunning, flavorful dishes.
  • Familiarity with Japanese culinary techniques, with a focus on sushi preparation and ingredient authenticity.
  • Strong knife skills and a keen eye for detail to ensure high-quality, aesthetically pleasing sushi presentations.
  • Experience in sushi preparation in a professional setting, ideally within a Japanese or high-end culinary environment.
  • Enthusiastic about learning and growing in the culinary field, with a dedication to upholding the highest standards of quality.

Requirements

  • 2+ years of experience in sushi preparation or a similar role in a professional kitchen.
  • Ability to work as part of a team, supporting the flow of service and collaborating with culinary leaders.
  • Strong understanding of Japanese cuisine principles, including sushi techniques, knife skills, and ingredient selection.
  • Commitment to maintaining a clean and organized kitchen environment.
  • Positive, engaging attitude with a willingness to learn and grow within the team.
